Welcome to Kabia Restaurant Kabia (which means ‘nest’ in Basque) is the name of his house and the place where you are most likely to find Juanma Hurtado. It is here that he spends his days and here that he practices his art, the art of cooking, immersed in the music and aromas of his kitchen, far from the bright lights and camera clicks of media fame. He is a demanding, conscientious and passionate chef, at once humble and wise, and an inveterate perfectionist.
Kabia is the result of Juanma’s silent hard work and constant effort over the course of 20 years, all focused on ensuring the triumph of flavour and taste and the satisfaction of everyone who walks through the door. And his dedication and enthusiasm have infected us all, which is why it is our pleasure to say to you:

Bikendi, our executive chef, joining Juanma at the kitchen. This couple have been cooking together for the last 20 years, sharing bitterness minutes, happiness and fun moments but always following same aim, cooking the best ingredients and improving, every single day.
Attached to them, Rachilda, serviceable and cheerful, combining both spaces, where settles our essence. Elena, at the floor, grin and charming, warmness (goxotasuna, as we say it here) taken to the next level.
Not the least, Jaione, Juanma´s partner, both in life and on this special journey, taking care of every aspect of Kabia (nest in basque language). Everyone at Kabia, we do and offer our best, in order to have an awesome culinary experience.
Juanma was born in Urretxu, next to Zumarraga. Since childhood, he knew that his passion was the culinary world, the kitchen. That strong belief, took him to join culinary studies along with his apprentice stage at Akelarre (3 Michelin star restaurant) along Pedro Subijana. This experience at Akellare, restated his passion for becoming a great chef and his passion for the culinary world.
Nevertheless, his mom and grandmother passed on him that passion for the kitchen After experienced working in different restaurants, he decided to move back to his roots, back Home.
At his place, surrounded by his people, Juanma found his nest (Kabia) and warmth. People who know Juanma, realize that his best way to show up and express himself is by cooking.That´s why it´s so important for him the excellence at every single dish.
